About 10 minutes into the boil on this bad mutha:

5.5 gallons
OG - 1.050
FG - 1.013
ABV - 4.9%

9 lbs Vienna
1 lb Crystal 10L
.5 Carapils

Mashed at 150 for 60 mins in 3.5 gallons.
Added 1.5 gallons and ran off to kettle.
3.5 gallons of 180 water and sparged to kettle to achieve 7 gallons in the boiler. I always aim for 5.5 gallons in the fermenter and expect to lose .5 galls to trub.

Glacier .5 oz 60 mins
EKG .5 15 mins
EKG .5 5 mins
EKG .5 0 mins

Safale -05

Going to cold condition for a few weeks after fermentation and see if I can get it to attenuate enough to fool people into thinking I used a SF lager yeast.

This beer is yummy. Crisp and refreshing with a little malt backbone from the crystal.

Cold conditioning for two weeks - snuck a sample last night. Pretty good! I do detect a small amount of DMS, just a little slippery feeling lingering on the tongue. Will lagering help this go away or is it there for the duration?

Still in primary due to laziness...let's call it a diacetyl rest. Just kicked a corny last night to make some room in the fridge...hopefully can rack it to a corny tonight and start cold conditioning! I'm going to Mexico on the 5th for a week so will have an opportunity to have some Mexienna Lagers.

I know! Ordered the grains from AHB then realized how dumb that was. I generally always throw a bit of Carapils in for head retention so was on auto pilot. They came crushed and mixed, so I had no choice. I'm going to cold crash it (going to 2ndary this weekend) and see what happens.
